Daily KPIs for restaurant and cafe owners: what to review

You do not need dozens of reports. Six numbers reviewed each day in two minutes are enough to know your restaurant's health and spot a problem before it grows.

1. Daily total sales

Compare it with the same weekday last week, not yesterday: Thursday sales are not Sunday sales. A repeated dip on one day deserves an offer or a scheduling change.

2. Orders and average ticket

Average ticket = total sales ÷ number of orders. Raising it with suggested add-ons (a drink, a dessert) is easier than finding new customers.

3. Best and worst sellers

The best seller should never run out and should stand out on the menu. The worst seller is either promoted with an offer or dropped to reduce stock and complexity.

4. Peak hours

Know the hours the place fills up so you schedule staff and prepare ahead before them.

5. Refund and discount rate

A rising refund or discount rate signals a quality problem or misuse of permissions. Review it per cashier.

6. Order source
